Dear Curiosity Journal,
Behind the scenes of spring awakening and vegetable farming taking flight, the maple syrup boils on. Lighting up the “near syrup” pot and tending to garden tasks is risky business, but staring endlessly into the bubbles is too tedious and time consuming in light of our spring to-do list. So, we take some chances, taking turns checking in. I noticed too late that Rufus was using a thermometer which I knew didn’t work, but had failed to throw away. Did Batch #2 get a little dark? Yes. Did it come close to caramelizing? Yep. Is it still delicious? Absolutely.
