Dear Curiosity Journal,

The sap tanks are full, so it’s back to the maples for another day of boiling. Wisconsin Winter sent us a little love letter, saying that it is still February. The added moisture and closer to “normal” late winter weather are a comfort to syrup makers and farmers alike. With the colder temperatures and snow-dampened firewood, it takes us a few hours to achieve a rolling boil in both pans. Icicles cleave to branches and melt into a make-shift rain, sending prisms of light through the forest like woody chandeliers. Rufus continues construction on his terraced benches for our upcoming workshop, rearranging soil, stone, and stumps to shape the amphitheater for our maple syrup stage. It’s time to settle in for the lengthy act of evaporation. We have a weekend in the woods ahead of us.
