Fingerling. What a funny word for a potato. While packing the CSA, Rufus found one that looked like a whole hand. Fingerling potatoes (not to be confused with new potatoes) have a slender elongated shape, rich flavor and creamy texture. Some varieties include Amarosa, French, Purple Peruvian, Austrian Crescent, Rose Finn Apple, Swedish Peanut, Magic Molly, and Russian Banana. I just love all of the different names for vegetable varieties. Who comes up with this stuff? When we first harvested these, I think we ate them for five days straight with no complaints. They roast up relatively quickly and are a fall delicacy on the farm. If you want to bring some potatoes that “slap” to the party, get yourself some fingerlings.
