Did you know that collard greens are considered a superfood? They are packed with nutrition, detoxify the liver, promote hair growth, create a barrier between the body and free radicals, strengthen bones, revitalize sore muscles, prevent cancer, diabetes, and anemia, and improve cholesterol, digestion, sleep, mood and memory. These leafy greens have been researched and promoted as a good diet for people struggling with depression. Collards are one of the crops that taste better after a cold snap. They gain a bit of sweetness and taste wonderful raw. So, if you usually pass on the collard greens, I encourage you to give them another chance, maybe find a place for them at your holiday table to add a bit of balance to the rich dishes.
